About the Recipe
Is there anything better in the summer, than a burger fresh from the grill? I like to keep my burgers simple, with a thick patty made from BC grown 63 Acres beef, piled high with cheese, tomatoes and a couple tasty condiments, all held togehter on a quality bun.
Ingredients
Beef:
63 Acres Beef Patties I am a big fan of searing my patties in a cast iron skillet, of course a summertime BBQ is also a fantastic way to celebrate BC beef with family and friends around the grill. You could make your own patties or purchase premade ones. I am definitely a 100% meat guy in my burger patty, no filler or additional love aside from salt and pepper on the meat as you are cooking it, but of course there are 1000’s of delicious options and variations. Pro-tip: Make sure the size of the patty matches the bun ;)
Tomato Ketchup I love this recipe, and it’s incredibly versatile with other fruits, blueberry, cranberry or red or yellow bell peppers.
5 cups chopped canned diced tomatoes (you could also use fresh)
½ cup red wine vinegar
½ cup BC honey (or brown sugar or maple syrup, the flavour will change but it will be delicious)
3 tbsp kosher salt
2 tbsp tomato paste
1 tsp cracked black pepper
Horseradish Mayo
1 cup mayo
2 tbsp horseradish
Squeeze of lemon
1 tsp Dijon mustard
½ tsp kosher salt
5 cracks of black pepper
Optional (1 tbsp thinly sliced chives or green onions)

We’re lucky to have so many locally made cheeses available in BC; they are perfect to enjoy on their own, or as part of your favourite summer recipes. I love sharp tangy BC cheeses on my burger, some other great options would be aged farmhouse, courtenay cheddar, gouda or havarti.

Preparation
Horseradish Mayo:
Mix everything together and keep in the fridge, I love this sauce of grilled meats or fish
Tomato Ketchup:
Simmer all ingredients in a small pot over medium heat for 20 minutes until most of the liquid is reduced Puree in a vita prep until smooth, set aside and cool Great with burgers, grilled meats or cheeses.
