About the Recipe
My friend Kyla King is the Jamz Queen.
I have known Kyla for years ever since she was the Pastry Chef at a fancy winery in the Okanagan.
When she branched out and started Rad Jamz I was quick to partner with her on jam for my business and fell in love with the quality of her products from day one.
One of the things I love about RadJamz is the unique and super fun flavours.

‘Car Waffles’ for your kids anyone???
Ingredients
Rad Jamz Red Chili Mayo
1 cup mayo
½ cup red chili jamz
—optional, add 1 tbsp horseradish or grainy mustard, and 2 tbsp chopped chives
Mix everything together
Preparation
Open Faced Albacore Tuna + RadJamz Red Chili Mayo
Choose your favourite bread, I like baguette
Albacore Tuna Loin
Ask you fish monger to thaw a loin, trim it up and portion it into 4 oz pieces
In a preheated fry pan over medium heat, approx 6/7 on the stove dial
Season the tuna with kosher salt, place 2 tbsp of olive oil in the pan
Lay the tuna into the pan and sear gently on all sides for approx 30 seconds per side
You want the tuna lightly golden brown but still rare in the middle.
This is called ‘Tuna Tataki’
Remove the tuna from the pan and let it rest.
Cut the baguette in half lengthwise, toast and then butter the bread
Spread the Red Chili Jamz Mayo on the bread
Slice the tuna and serve on top of the Red Chili Mayo
Garnish with butter lettuce and some shaved fennel
Squeeze a wedge of lemon on top of the tuna and a sprinkle of flaked salt.

Build your own charcuterie with local cheeses, cured meats and smoked seafood, breads, crackers, and of course your favourite Rad flavours of Rad Jamz pickles, jams and jellies.
One of my favourite summer camping, road trip, party activities is to build a giant charcuterie board.
